Avocado pasta #MicroblogMonday


Catering for vegan guests is always that bit more challenging. There are some really delicious recipes out there but so many of them require a LOT of preparation time. While searching for something easy and vegan I came across this recipe for avocado pasta. It sounds a bit strange when you first hear it but I remembered enjoying something similar in a restaurant once. The instructions looked straightforward to follow and the ingredients easy to procure so hubby and I decided to give it a go last weekend.

It only took around a half hour or so to prepare and cook and we were both happy with how it turned out! Hubby added some chilli flakes to his portion in the end but I'm not a big fan of very spicy food and was happy with the taste as it was. The picture probably doesn't do it justice but it really was quite tasty. Handy if you are avoiding dairy too! If you wanted to make it non vegan you could always serve it with some Parmesan cheese / grilled chicken or prawns.

  3. I'm always on the lookout for a new pasta recipe! Yay. And I just realised that most of my pasta recipes are in fact vegan. Clearly, they're my favourites!

  4. That sounds intriguing! I love avocados. There's a restaurant here that makes a vegan avocado chocolate mousse that is insanely good (and you would NEVER know what the main ingredient is if no one told you, it transforms into a rich pudding!). I can't live without my parmesan though, so I'd have to make it (the pasta, ha) unvegan.

    1. oh yeah, you could definitely add some nice parmesan to it! Yeah I've had vegan chocolate mouse before and it was surprisingly good. Avocados are so good.

  5. I am a great fan of AVOCADOS and I tried this recipe for my niece's bachelorette party and it turned out yummy, everyone loved it and I was loaded with appreciation.   6. Oooh, this looks yummy. I'm always on the lookout for vegan/vegetarian recipes, both to cut back on so much meat myself and also for when I have guests that are vegan/vegetarian. Will have to give this one a try!

  7. Pasta looks yummy. Loved the detail recipe. Saturdays is the day for continental and we mostly make sandwiches and salads.Else, my week was pretty much busy with cooking and crafting. Looking forward to a great week ahead.
